Chili-Spiked Sweet Potato Bake
Author Notes: This began by trying to resolve the whole Thanksgiving sweet potato casserole dilemma. Is it dessert or a side? To eliminate any confusion, I spiked the old stand-by with savory spices. Now you can have your sweet potato pie, too! - SupperStarter
Makes 1 8x8 casserole
- 2 cups sweet potatoes, baked, peeled and mashed
- 1/2 cup brown sugar
- 1 egg
- 1/4 cup melted butter
- 1 teaspoon chili powder, divided
- 1/2 teaspoon paprika
- 1/4 teaspoon cinnamon
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon salt
- 1 cup crushed Ritz crackers
- 1/2 cup packed brown sugar
- 1/4 cup melted butter
- Mix together sweet potatoes, brown sugar, egg, butter, 1/2 teaspoon chili powder, paprika, cinnamon, cayenne pepper and salt. Spread into 8 x 8 baking dish prepared with cooking spray.
- Combine crackers, brown sugar, melted butter and remaining 1/2 teaspoon chili powder. Sprinkle over casserole.
- Bake at 350 degrees for 20 to 25 minutes.

I've never been a sweet potato fan in anything but desserts, but I think this is on the fence enough for me to enjoy.
