Sunny Day Anchovy Sandwich

Serves 1

Lemon Vinaigrette Dressing

  • 1 juiced lemon
  • 2 tablespoons dijon mustard
  • 1 tablespoon olive oil
  • 1 dash salt and pepper

Sandwich

  • 1 Ciabatta Roll
  • 1 small can anchovies
  • 1 bunch Frisee Greens
  • 1 dash salt and pepper
  1. Whip together ingredients for vinaigrette.
  2. Slice Ciabatta Roll in half.
  3. Toss Frisee Greens and Anchovies together.
  4. Place Frisee and anchovy mixture on Ciabatta Roll.
  5. Drizzle with Lemon Vinaigrette.
  6. Top with salt and pepper as well as other half of ciabatta roll.
  7. Enjoy!
