Thanksgiving Southern Sweet Potato Pecan Bake

Serves 6 to 8 as a side dish
Topping
- 1 cup brown sugar
- 1/3 cup butter, softened
- 1/2 cup pecan pieces
- Mix all of topping ingredients and set aside.
Sweet Potato
- 3 cups canned yams
- 1 cup sugar
- 2 eggs
- 1/2 cup evaporated milk
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- In a medium saucepan stir all ingredients over low heat until well mixed and sugar dissolves. Remove from heat and pour into a casserole dish. Top with pecan mixture and bake in oven at 300 degrees F for one hour, until bubbly and browned. Serve hot.
