Mango Caramel Angel Food Cake
Author Notes: I love mangoes with a passion. So, inspired by @AbbyDodge's #BakeTogether April event, I baked her basic Angel Food Cake recipe and created my own 2 toppings: Caramel Topping with Mango Flavoring and a Mango Syrup Topping. It made a marvelous mango dessert! - ElizabethQ
Serves 8-10
- 1 cup granulated sugar
- 1/8 cup mango juice
- 1 whole ataulfo mango, cubed
- 1/2 cup fresh mango puree
- 1 cup granulated sugar
- Heat the sugar in a heavy saucepan till it turns dark golden brown and will be bubbly, in about 5 to 6 minutes.
- At this stage, add the mango juice and tilt the pan around to blend the juice and syrup well.
- Pour this on top of the Angel Food Cake by Abby Dodge. The caramel will harden right away.
- Then separately boil together the mango puree and the cup of granulated sugar, till it turns a golden brown and has a syrupy texture.
- Add the mango cubes and stir quickly, then add this on top of the Abby Dodge Angel Food cake.
- Bake ahead @AbbyDodge Angel Food Cake recipe for April's "Bake Together" event, and when cake has cooled add these 2 mango-flavored toppings.
