A Bowl Of Mango Sunshine

Author Notes: I love fruit soups, with strawberry soup and plum soup at the top of my list. I wanted to create something with mangos that wouldn't be a dessert (because we've been eating so many cookies, crisps, and cakes lately), so soup seemed like a natural choice for me.TheWimpyVegetarian

Serves 4

  • 3 ripe mangos
  • 1 seven-ounce container of plain, low-fat Greek yogurt (I used Fage)
  • ¼ cup coconut milk
  • ¼ cup low-fat milk
  • 1 tablespoon + 2 teaspoons lime juice
  • ½ teaspoon salt
  • 2 teaspoons honey (I used Buckwheat honey)
  • 1 teaspoons mint leaves
  • 1/2 Serrano pepper, minced
  1. Slice the mangos in half around the large seed in the middle. Scoop out the flesh with a spoon. Put the flesh in the bowl of a food processor fitted with a blade.
  2. Add all the rest of the ingredients to the bowl, and whirl the processor like crazy. If you don't have a food processor, I'm sure a blend would work fine too.
  3. Chill for at least an hour before serving. I found the flavors to be best when chilled overnight.

Hi, Suzanne! One question: Do you have a rough measurement for how much mango actually goes in this recipe? I live in South Florida, where it's not only the height of mango season, but we have so many varieties in various sizes available, it's difficult to guess.

That's a fair question RJ Flamingo! I'm not sure is the sad answer. I used fairly large mangos, I can tell you that much. I could have sworn I had that discussion with someone on my blog where I posted the recipe, but I can't find it now - so I must have imagined it. I promise to make this again over the next few days and I'll give you a much more precise answer :-)

My mango trees are dripping with fruit and this is definitely going to get me outta bed to get the fruit rather than letting my chickens have em...this looks great and I have all the ingredients ready to go: do you think Tupelo honey would be a good honey to add? Or agave nectar or brown rice syrup or vermont maple?
