I grew up near a apple growing area famous for their Gravensteins which are wonderful in pies, cakes, cider, apple sauce and just juice. They have a very short season and don't travel well so unless you are lucky enough to live near a tree you will probably never taste one. But, you can buy applesauce and cider and juice made from this wonderful apple.My mother made this cake as long as I can remember. I think she found it in the Sebastopol newspaper and I make it exactly like she did...with Gravenstein apples. You have to believe me when I tell you how good it tastes. Because it is brown I just couldn't take a attractive picture of the cake. I just was too brown. I added a caramel glaze and that just made it shiny and brown. —dymnyno

What You'll Need
Ingredients
  • 4 cups diced apples (about 7 apples ,peeled)
  • 2 cups sugar
  • 3 cups flour
  • 2 eggs
  • 2 teaspoon baking soda
  • 2 teaspoons vanilla
  • 1/2 cup oil or butter
  • 2 teaspoons cinnamon
  • 1 cup chopped walnuts
  • 1/2 teaspoon salt
  • 1/2 cup heavy cream
Directions
  1. Mix the diced apples with eggs. Then add sugar, cinnamon, oil, and nuts and cream. I have used both oil and I have used butter...both work.
  2. Sift flour, soda, salt and mix into wet ingredients.
  3. Pour into a 9 inch cast iron pan lined with parchment.and bake at 350 degrees for about an hour. Check to see if the center is cooked with a knife or toothpick.

The gravensteins are ripe and so delicious. I tweeked this recipe a bit and I baked it in a heavy cast iron pan which worked beautifully.

I saved this recipe for Thanksgiving.

I substituted one cup of flour with whole wheat flour, and cut the sugar by a third. It still turned out really great, but because of the lack of extra sugar, it wasn't too sweet. I added a sugar/vanilla/milk glaze on top and it made it even more moist and added the right sweetness to it.

Now I can't stop eating it. This recipe forced me to learn how to peel apples.
