Avocado Bean Salad
Author Notes: This is power food. Inspired by my mom's shoepeg corn salad, I added protein and healthy fats for a well rounded salad that could easily become a meal! - SeaweedandSassafras
Serves 4
- 2 Avocado, cubed
- 2 Medium Tomatoes, diced
- 1/2 Medium White Onion, diced
- 1 15 oz can Chickpeas, rinsed and drained
- 1 15 oz can Black Beans, rinsed and drained
- 1 11 oz can Shoepeg Corn, drained
- 1/4 cup Red Wine Vinegar
- 1 tablespoon Rice Wine Vinegar
- 1 teaspoon Fresh Lemon Juice
- 1 teaspoon Fresh Lime Juice
- 2 teaspoons Garlic Powder
- 1 teaspoon Cumin
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- Mix together in a large bowl.

This is a great variation on an easy and fantastic party staple- cowboy caviar. The only variation I did to this recipe was fresh grilled corn and added some basil from my herb planter- seemed to make it more summer-y. Great call on the vinegars!
