Author Notes: I baked and ate this dessert the day I went into labor with my first child. I was one day beyond my due date and getting anxious. I henceforth associated the onset of labor with the consumption of this wonderful and easy to prepare dessert.
I have baked (or given this recipe) to a number of women who are awaiting the birth of a baby, assuring them that after eating the cobbler they will go into labor! After all, it worked for me. Of couse, it only works for babies due in the summertime. —Leslie_
- 5 cups fresh peaches (or nectarines or prune plums)with the peel
- 1 tablespoon fresh lemon juice
- 1 cup sugar
- 1 cup flour
- 1/2 teaspoon salt
- 1 egg, lightly beaten
- 6 tablespoons melted, unsalted butter
- Sweeten peaches (or other fruit) to taste.
- Add cinammon to taste and lemon juice.
- Pour into over-proof baking dish.
- Mix sugar, flour, salt and lightly beaten egg until crumbly and spread on top of peaches.
- Drizzle top with melted butter and bake in pre-heated 375 degree oven for 45-50 mintues until bubbly and light brown.
- Can be served as is, or with creme fraiche, Greek-style yogurt, whipped cream or ice cream.
