Makes 2 1/2 cups
- 1 cup coconut milk
- 1/4 cup coconut rum
- 1/2 cup blueberries
- 1 cup coffee ice cream
- Mint sprigs (optional)
- 1. Combine all ingredients in a blender. Add some ice cubes and blend until smooth.
- 2. Pour into glasses and garnish with mint, if desired.
