Sauteed Prawns, Potatoes and Enoki Mushrooms

When the potatoes are in season, I make this yummy treat. Simple marinade adds flavor to this simple dish. Do use fresh thyme! If you cannot find enoki mushrooms, use oyster mushrooms instead. Both enoki and oyster mushrooms are usually available at Asian grocery stores.

What You'll Need
Ingredients
  • 2 to 3 tablespoons olive oil
  • 2 garlic cloves
  • 8 ounces prawns
  • 2 tablespoons white wine
  • 2 bunches thyme
  • 6 ounces enoki mushrooms
  • 4 to 5 pieces potatoes
Directions
  1. Marinate prawns with a pinch of salt and pepper, thyme and white wine and set aside. Boil the potatoes until soft (You can boil the potatoes in advance and keep them in the fridge).
  2. Heat olive oil and sautee sliced garlic in a pan over low heat until fragrant. Break the potatoes in half and sautee with the oil till the surface becomes lightly brown. Sautee marinated prawns and enoki mushrooms with the edge trimmed.
  3. Season with salt and cracked pepper.
