What You'll Need
Ingredients
  • 4 cups Rice
  • 1/2 pound Boneless, Skinless Chicken Breasts
  • 1 cup Peas & Carrots; frozen
  • 1 Small, White Onion
  • 2 Cloves Garlic
  • 2 Eggs
  • 3 tablespoons Sesame Oil
  • 1/4 cup Lite Soy Sauce
Directions
  1. Utensils: Large Skillet, Large Spoon, Tablespoon, Measuring Cup, Knife
  2. Prep:
  3. Prepare rice following package instructions to yield 4 cups cooked rice.
  4. Cook & chop chicken breasts into bite-size pieces.
  5. Chop onion.
  6. Mince garlic cloves.
  7. Cook:
  8. Heat sesame oil in a large skillet on medium heat.
  9. Add onion, garlic, peas & carrots and "fry" until the veggies are tender (onions will be closer to clear).
  10. Crack eggs into skillet and scramble, mixing in with the vegetables.
  11. Add rice, chicken and soy sauce to skill.
  12. Mix VERY well.

Excellent. I cut back on the soy and substituted broccoli because I had it. Came together perfectly in my InstaPot on Sauté 😄

I made this dish last night, and it’s a winner. I used leftover chicken, no bacon, and added some chopped celery and red pepper for crunch and color. It’s easy and delicious.

Do you have the actual original recipe for this? The original one had brown rice and oyster sauce. The link to skinnymom is no longer valid. Thanks for help!
