Finger Licking Panko Crusted Oven Fried Chicken

This mouthwatering "Panko Crusted Oven Fried Chicken" is so good; it is actually better than the one you remember before giving up gluten/soy and dairy. As an extra bonus, since it is oven fried with the skin removed, it is so much healthier than most of the original versions. Totally guilt free, so indulge! —simply 123 allergy free

What You'll Need
Ingredients
  • 3 pounds bone in skinless chicken thighs and/or legs
  • 2 eggs
  • 1 tablespoon your favorite non dairy milk
  • 1 teaspoon ground black pepper
  • 2 tablespoons dijon mustard
  • 1 teaspoon salt
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 1/2 cups panko style gf bread crumbs
  • soy free olive oil cooking spray or olive oil
Directions
  1. Preheat oven to 400° F.
  2. Spray a large baking dish generously with the olive oil spray, or if using olive oil coat the bottom of the dish.
  3. In a bowl, whisk together the eggs, garlic powder, dijon, red pepper flakes, non dairy milk, salt and pepper. Pour the panko crumbs into a second bowl.
  4. Dip each piece of chicken first in the egg mixture and then roll in the panko crumbs. Arrange in a single layer in the baking dish.
  5. Spray tops of the chicken with the cooking spray or drizzle with olive oil. Bake for approximately 1 hour. When the chicken is finished, the tops should be starting to turn golden brown.

I skip the non-dairy milk, since I never have any (or it's expired) and don't use the red pepper flakes. The only GF bread crumbs I can find aren't Panko style. This said, this is magnificently good fried chicken! My partner said it was the best fried chicken he'd ever had, and guests raved over it too. I would eat it more often if I could find the GF bread crumbs.

Page came up under Passover options, Don't think Panko meets those requirements.

How much garlic powder? Its not on the ingredient list.

The recipe on the website, www.simply123allergyfree.com, lists 2 to 3 teaspoons garlic powder.

An easy tasty alternative to deep fried chicken. Scaled this right down to feed two people using both chicken and fish, so didn't use any milk. The chicken released a lot of juices as it was baking so I flipped them over onto dry areas on the baking sheet about halfway through (35 mins was sufficient for the chicken, just 15 for the fish - paler crumb but then the meat wasn't overcooked). Dijon added a great flavour, will remember that in the future!
