Eggs & Garlic Spinach

Serves 1

  • 1/2 pound spinach
  • 1 tablespoon olive oil
  • 3 cloves chopped garlic
  • 1/2 onion
  • 2 pinches sea salt
  • 1 pinch ground black pepper
  1. In a pan, heat the olive oil and saute the garlic and onion over medium heat until it's browned. Add spinach, sea salt, and pepper to the pan, toss it with the garlic and onions. Let it cook until spinach is wilted. With everything still in the pan, drop eggs in. Serve on a plate and you are ready to dig in!
