Serves 2

For Pad Thai

  • 5 cups shredded zucchini
  • 3 cups shredded carrots
  • 1 cup shredded red cabbage
  • 1 sliced red bell pepper
  • 2 cups sliced mushrooms
  • 1 cup bean sprouts
  • 1/2 cup chopped cilantro
  • 1 cup sliced scallions or green onions
  • Thumb of ginger
  • Juice of one lime
  • 1/4 cup crushed pistachios
  • jalepeno (optional)

Sesame Ginger Dressing

  • 3/4 cup raw sesame seeds
  • 1/2 cup apple juice
  • 1/3 cup orange juice
  • 1/4 cup pistachios
  • 1/4 cup tamarind sauce
  • 1 thumb of ginger
  • 1 lime squeezed
  1. Mix all Pad Thai ingredients together in large bowl.
  2. Mix all Sesame Ginger Dressing together in blender.
  3. Drizzle Sesame Ginger Dressing over Pad Thai ingredients.
  4. Enjoy
