Enoki mushrooms, which are thin and white and have a mild flavor with a delightful crunch, are very popular in East Asian cooking, and you'll most likely find them in soups or as a side dish. Once you give them a try, you'll always have a bunch hanging in the fridge, as they've got a variety of uses. And if you happen to have some on hand, look no further than this super-easy recipe that leads to perfectly cooked enoki mushrooms. Not only that, these mushrooms are highly nutritious if you're craving a snack that doesn't consist of chips. All you need for this recipe is some sesame oil, garlic, and soy sauce, which really enhance the savory flavor of the mushrooms. After cooking the raw bite out of the garlic, simply add said mushrooms, let them cook until the desired texture is reached, and then stir in the soy sauce to warm through. That's all it takes for a wonderful, appetizing side dish or snack.

And this recipe can be tailored to whatever you have on hand. Definitely add some finely chopped ginger along with the garlic if you've got some. Garnish with bright scallions as a finishing touch. Want a little bit of a bite? Add some crushed red pepper flakes or drizzle with a touch of Sriracha before serving.   • 1 bunch enoki mushrooms, trimmed
  • 1 tablespoon sesame oil
  • 1 garlic clove, finely chopped
  • 1 tablespoon low-sodium soy sauce
Directions
  1. In a wok or medium skillet over medium-high heat, warm the oil. Add the garlic and cook, stirring frequently, for 1 to 2 minutes, until slightly golden.
  2. Add the mushrooms and toss to coat. Cook, stirring, for 2 to 3 minutes, until slightly wilted.
  3. Add the soy sauce and cook, stirring, for about 1 minute more, until warmed through.

I tried this "simple" recipe sauteing enoki mushrooms: BUT the mushroom STILL was very chewy and resistant to clear cutting.... tasted good, but the chewy, stringy bit was somewhat off-putting from the guests - who did not want much of it....

I tried this and it was delicious. I served it as an appetizer to a stir fry dinner. Only comment is probably best to have one bunch for every two people
