Slow Cooker Black Bean Chili

Warm up with a large bowl of Slow Cooker Black Bean Vegetarian Chili during the cold winter months! —Megan Olson

What You'll Need
Ingredients
  • 2-3 zucchini
  • 2 15 oz cans black beans
  • 2 28 oz fire roasted diced tomatoes
  • 3/4 cup tomato paste
  • 1 medium onion
  • Salt & Pepper to taste
  • 1 tablespoon oregano
  • 1/2 teaspoon nutmeg
  • 1 teaspoon garlic
Directions
  1. Chop zucchini into 1 inch pieces
  2. Finley slice onion
  3. Add all ingredients to slow cooker
  4. Cook on low 6-8 hours or high 3-4 hours
