Author Notes: My mum use to make these to use up extra Zucchinis when they are in season. YUM! If you like parmesan cheese, you can do 1/2 mozzarella 1/2 parmesan also. —lesidhe
- 2 cups Grated Zucchini
- 2 eggs beaten
- 1/4 cup chopped onions
- 1/2 cup all purpose flour
- 1 cup mozzarella cheese (or 1/2 mozzarella/1/2 parmesan)
- 2 tablespoons olive oil
- salt to taste
- Combine the zucchini, eggs, onion, flour, Parmesan cheese, mozzarella cheese, and salt to taste. Stir to combine ingredients. Heat a portion of oil in a skillet over medium-high heat. Cook as you would pancakes. (Drop heaped tablespoons of mixture onto skillet and cook a few minutes each until golden. Great served with Salsa and Sour Cream for dipping!
