Author Notes: Pancake from summer squash. My russian grandmother used to cook for me when I was a child. Variation: add cinnamon, raisins, shredded zucchini or squash.
- 3 cups grated summer squash
- 2 eggs
- 1 cup flour
- 1/2 cup sugar
- Combine all ingredients in a mixing bowl and make a pancake-like batter. Drop by spoonfuls onto hot oiled griddle or skillet. Turn over when bottom is golden
