Squash Pancakes

Author Notes: Pancake from summer squash. My russian grandmother used to cook for me when I was a child. Variation: add cinnamon, raisins, shredded zucchini or squash.

Serves 4

  • 3 cups grated summer squash
  • 2 eggs
  • 1 cup flour
  • 1/2 cup sugar
  1. Combine all ingredients in a mixing bowl and make a pancake-like batter. Drop by spoonfuls onto hot oiled griddle or skillet. Turn over when bottom is golden
