Spiral Squash and Zucchini Salad Explosion

You will need a spiral vegetable slicer to make this. It adds to the delicacy of the dish. Spiral slicer's are affordable. Usually no more than $30.00 and a wonderful tool, especially for use in healthy recipes such as vegetable pasta or raw recipes and salads. —Staci Fowles

What You'll Need
Ingredients
  • 16 ounces fresh spinich
  • 2 zucchini's
  • 2 summer squash
  • 2 celery sticks
  • 1 half cup of fresh shaved corn
  • 1 half white onion cut thin rings
  • 1 third cup fresh pineapple small cubed
  • 1 third cup dried cranberries
  • 6 ounces good quality goat cheese crumbled
  • cracked peppercorn to taste
  • 3 tablespoons extra virgin olive oil
  • 1 to 2 tablespoons of good balsamic vinegar
  • 1 quarter cup walnuts
  • 2 green apples
  • 1 cucumber
  • 2 med sized carrots
Directions
  1. Lay the spinich down on a large platter. With the spiral cutter, cut thin spirals using the apples,and cucumber. Using the spaghetti attachment, cut the zucchini, summer squash, cucumber, and carrots. Place on top of the spinach. Chop the celery in 1/4 inch pieces. Crumble the goat cheese. Add remaining ingredients and toss with the oil and vinegar. Super healthy and hard to believe it's all raw. The spiral cut is key to this gorgeous dish.

use " World Cuisine Tri-Blade" Plastic Spiral Vegetable Slicer about $30-36.00 - the ones under $20 are not very good. Happy Eating....

There are a lot of different spiral slicers on Amazon...which one do you use?

Hi dymnyno, to do this recipe I used a brand called "Spiralschneider" by German chef Johann Lafer by LURCH.( you can google it ) prices are quoted in german however, I located this one in a store called "Home Goods" check internet for a location nearest you. I see you are a finalist, congratulations... I am going to try your recipe this weekend. Ciao.

I gotta have a spiral slicer!!!! I love raw salads and this ones has many layers of flavors and textures going.

I love raw salads too as you prob. guessed :)

Try the following slicer, just be careful of the blades when cleaning (really sharp).
This is the one I use " World Cuisine Tri-Blade" Plastic Spiral Vegetable Slicer about $30-36.00 - the ones under $20 are not very good.

Gosh, the spiral slicer really makes a difference in eating more good healthy food. And in this salad combination there were no leftovers at my little party! Bravo to this delicious combination.... you almost need no dressing at all... Buy the way, my husband and his male friends did eat more than their normal share. :)

Yesterday I say a spiral slicer, rationalised it away - didn't need it, couldn't see why. Well, I'm going back!!!!!!!!

Originally created this exciting salad to entice my husband to eat more vegetables by disguising them using the spiral slicer, and at the same time moving away from the traditional types of salads that can be quite boring after a while. Needless to say it worked!
