Olive Oil Roasted Fries with Curry Mayo & Spicy Ketchup

Serves 2

  • 4 russet potatoes
  • olive oil
  • sea salt
  1. For curry mayo, add 3 tablespoons mayonnaise, 2 teaspoons curry powder and a squeeze of lemon juice.
  2. For spicy ketchup, add 3 tablespoons ketchup, and a few dashes of hot sauce (we like Cholula or Tapatío, add for desired spice level)
  3. For fries, cut them in similar shaped wedges so they cook evenly. Toss with olive oil and sea salt, place on a baking sheet and cook for 30 min on 400 degrees. Check on the occasionally giving them a turn and toss. Cook for desired crispiness it's about 30-45 minutes.
  4. I like to also toss them with a little malt vinegar at the end :) Super yummy and much healthier than frying.

One of my favorite recipes!!!! I love oven roasted fries!....especially with my own olive oil.
