Author Notes: I love watermelon, here is a light, simple and refreshing dish. Choose your watermelon based on how many people you will be serving. If it's for a picnic a large watermelon would be appropriate, I just bought a quarter of a melon. You can also just prepare this buy having slices of watermelon, drizzling it with honey and topping with fresh mint and a touch of sea salt. I like to make it into a salad. Nicole Franzen

  • watermelon
  • lavender honey
  • mint
  • sea salt
  1. I decided to cut the watermelon into small cubes. I did this by making slices, all the same size. Then run your knife along the edge of where the watermelon starts to turn white. Remove rind. Then make equal cuts long wise and then cubes. I think it looks nice to have uniform cubes.
  2. Toss the watermelon in the bowl and gently drizzle with honey and a tiny pinch of sea salt. The salt just heightens the flavors, you would never know its there. Then depending on the size of the leaves of mint, I would do a chiffonade or leave them whole. Mine were very tiny and off my plant so I left them in their natural state. Season to your liking.
