Author Notes: well, my dad and sister and i love tomatos. One day when making dinner we forgot to buy the greens for the salad. took a look at what we had and came up with..Tomates a la Barboza...note: the cheese we used is called Queso Panela but you can use Feta cheese.david barboza

Serves 5

  • 4 tomatos
  • 2 avocados
  • 2 jalapenos
  • 1/2 cup chopped cilantro
  • 1 cup feta cheese
  • 1/3 cup pine nuts
  1. slice the avocados. jalapenos and add to bowl throw in the cilantro the feta. salt and pepper to taste. mix till combined.
  2. slice the tomatos into semi thick rounds. place in a serving platter, put a spoon full of the avocado mix on top of each slice.
  3. garnish each slice with the pine nuts, drissle olive oil and balsamic vinegar salt and pepper to taste,,,,and enjoy!
