Author Notes: well, my dad and sister and i love tomatos. One day when making dinner we forgot to buy the greens for the salad. took a look at what we had and came up with..Tomates a la Barboza...note: the cheese we used is called Queso Panela but you can use Feta cheese. —david barboza
- 4 tomatos
- 2 avocados
- 2 jalapenos
- 1/2 cup chopped cilantro
- 1 cup feta cheese
- 1/3 cup pine nuts
- slice the avocados. jalapenos and add to bowl throw in the cilantro the feta. salt and pepper to taste. mix till combined.
- slice the tomatos into semi thick rounds. place in a serving platter, put a spoon full of the avocado mix on top of each slice.
- garnish each slice with the pine nuts, drissle olive oil and balsamic vinegar salt and pepper to taste,,,,and enjoy!
