Pasta Carbonara w/ Fresh Green Beans

A quick and easy pasta carbonara using fresh garden green beans. Feel free to adapt this with whatever fresh vegetables you happen to have! —mtlabor

What You'll Need
Ingredients
  • 8 ounces thin spaghetti
  • 1 tablespoon olive oil
  • 1 onion, sliced thinly
  • 1 cup fresh green beans, trimmed and chopped
  • salt and pepper to taste
  • 4 garlic cloves, minced
  • 1/2 cup heavy cream
  • 2 eggs
  • 2 strips of bacon, cooked and chopped
  • 1/3 cup Parmesan cheese, grated
  • 1/4 cup Pecorino cheese, grated
Directions
  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package directions for al dente, about 8 to 10 minutes. Drain.
  2. While the pasta is cooking, heat a large skillet under high heat. Add olive oil, onions, and green beans. Season with salt and pepper and saute for about 5-6 minutes, or until onion starts to soften.
  3. Reduce heat to medium and add garlic. Cook for an additional 5 minutes longer, stirring occasionally.
  4. In a small bowl, whisk the cream and eggs. Set aside.
  5. Add the chopped bacon and the cooked pasta to the skillet.
  6. Mix well. Remove from heat and add in cream/egg mixture. Let the residual heat slowly thicken the sauce. Stir in both cheeses and season with salt and pepper, if desired.
  7. Serve right away with cheesy garlic bread!

Um, no. This was a complete waste of perfectly good pancetta and fresh green beans. It was very bland and I'm a pretty good cook 99% of the time. I think it would have been better the way macumeca suggested.

Hello!
We are some students of a catering technical college, Bergamo, Italy. We read your recipe "pasta alla carbonara" and we found lots of mistakes in it!!!! We are sorry for that but we would like to suggest you the right ingredients:
No garlic.
No fresh green beans.
No parmesan cheese.
No onion.
No heavy cream.
The other ingredients in your recipe are correct.
You can't call it carbonara when has nothing to do with it!

everything is better with bacon..... and cream..... and garlic and pasta!
Try adding diced red sweet peppers to this for added color and a subtle crunch.

Great recipe! I made some small changes. I used asparagus instead of green beans, and added 6 strips of bacon. Used 1/4c half and half with a little chicken stock and whisked in one egg. I then s-l-o-w-l-y whisked in some of the reserved starchy pasta water. Will definitely make this again.
