Author Notes: This is a variation of a recipe from a Bicentennial cookbook published in my hometown (Halifax, PA). I'm not much of a baker, but I usually make this once or twice a year--it's so incredibly easy! And me being me, I upped and altered the spices... —KKNY
- 3 medium-sized semi-tart apples (like Fuji or MacIntosh), peeled, cored, and diced
- 1 cup sugar
- 1 cup all-purpose flour
- 1 large egg
- 1/4 pound butter, softened
- 1 teaspoon vanilla extract
- 1 tablespoon ground cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon ground cardamom
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- dashes salt
- 1 cup chopped walnuts
- Make sure the butter is soft. Preheat oven to 375 degrees F.
- In a large bowl, mix all of the ingredients by hand. As you mix, the apples will moisten the dough, and you'll end up with a stiff batter.
- Spread into a greased 9x7" pan. Bake for 40 minutes.
