Cheesy Cauliflower Casserole

My mother made this favorite for the whole block when wewerekids! Who would'nt go for a melty, cheesy, rich, creamybutterycombo ? "Comfort Food" at it's best ! —micki barzilay

What You'll Need
Ingredients
  • 1 head of cauliflower
  • 8 ounces triple cream fromage
  • 1 cup grated Fontina cheese
  • 2 cups freshly grated parmesan
  • 1 cube of butter ( 1/2 cup)
  • 2 cups Bread crumbs
Directions
  1. Wash & clean a head of cauliflower ( Organic preferred). Cook till soft. Remove, drain.,& assemble in bite size pieces layered into an oven safe casserole dish. bottom . On top layer the fromage triple creme cheese & freshly grated parmesan, & butter ...then follow with a 2nd layer of each .Top w/ bread crumbs . Bake @ 350 degrees until cheeses are melted & breadcrumbs are toasty ...though stay vigilen & don't burn the breadcrumbs. Shut the oven off and top with butter

This is a variation on one of our cold winter favorites. Definitely comfort food! My daughter, a 16 year old vegetarian, considers "cauliflower cheese" the ne plus ultra of all meals. Hope you submitted it to the Cauliflower contest!

Antonia....Your comfort is my comfort...thanks so much.

I made it for dinner tonight at my partner's insistance as this is one of the few vegetables I can get him to eat - since to quote him " This recipe is a great vehicle for butter and cheese" !

You're right this isn't a low fat or cholestrol free dish, nor for the faint of heart... but after all you only live once, therefore even a bite is better in this case than no bite at all !

I love fontina with cauliflower, and can only imagine the triple cream and parm additions! Thanks for this recipe. Sounds like a great potluck dish, too!

This puts poutine to shame in the richness department. I'm from Wisconsin and I wouldn't dare to eat this if I wasn't in a monitored ICU bed. Maybe a bite with a big salad on the side.
