Baked Pumpkin Pie French Toast

What You'll Need
Ingredients
  • 6 slices thick cut challah bread
  • 4 large eggs
  • 1/2 cup half and half
  • 1/2 cup milk
  • 1/3 cup maple syrup
  • 1 cup 100% pure canned pumpkin
  • 1 tablespoon pumpkin pie spice
  • powdered sugar for dusting
  • maple syrup for serving
Directions
  1. Grease an 8 inch square pan with cooking spray.
  2. Cut slices of challah in half and then in quarters.
  3. Whisk together eggs, half and half, milk, maple syrup, pumpkin and pumpkin pie spice.
  4. Assemble one layer of challah in the baking dish fitting it in like puzzle pieces
  5. Pour 1/3 of the pumpkin mixture over the first layer of bread and then add a second layer of bread pieces on top of the first.
  6. Pour the remaining pumpkin mixture over the bread being sure that it seeps into every crevice and covers each piece of bread up top. Move some pieces around if need be to allow pumpkin filling between each piece of bread. (It will look like you’ve got too much liquid. Don’t worry, as long as it’s not spilling out, you’re ok.)
  7. Let the bread soak up some of the liquid for 45 minutes to 1 hour.
  8. Preheat the oven to 350 degrees and place the baking dish on the middle rack to cook for 30 to 45 minutes or until the pumpkin is set and bread is brown.
  9. Remove from oven and let sit for 5 minutes before cutting into squares.
  10. Dust each serving with powdered sugar and drizzle with maple syrup. Makes about 4 to 6 servings.

I've made this for 2 separate groups of people. They all loved it! And I've been asked for the recipe too, so you know it went over big.

I doubled the recipe for a 9x13 pan. I made 2 of those this last weekend and added walnuts to the top of one. Also, I used 10 eggs instead of 8 because I like my french toast fluffier. Couldn't be happier!

Just made this and it was fabulous! I may try to incorporate bacon into it next time. :-) Thanks for sharing something so yummy.

Wow, how incredibly creative! I never would have thought to combine french toast and pumpkin pie (which happen to be two of my favorite foods). I have a five year old that is going to be an incredibly happy boy when I make this for him this weekend! Thanks so much for posting!
