Jalapeño-Apple Slaw with Honey Lime Vinaigrette

This is a tangy, spicy oil based slaw that has always been a crowd pleaser. It is great with pulled pork sandwiches, BBQ ribs, fish tacos or a Mexican feast; and I have even served it with a holiday turkey or Christmas prime rib dinner - using festive colored bell peppers. Granny smith is the preferred apple to use, however, pink lady (in photo) adds a delicious tart flavor, too. I seriously hope you will try this! —lapadia

What You'll Need
Ingredients
  • 1 1/2 tablespoons honey
  • 1 1/2 tablespoons fresh lime juice
  • 2 tablespoons avocado oil
  • 1 1/2 tablespoons seasoned rice vinegar
  • 1/2 teaspoon himalayan sea salt (optional)
  • 2 large jalapeños - cut in half moons
  • 1 medium bell pepper - red, orange, yellow or a combination of colors (using mini-bells)
  • 1 very large Granny smith apple (preferred) but pink lady adds a delicious tart flavor, too
  • 2 green onions
  • 7 1/2 cups finely sliced cabbage
Directions
  1. Finely slice the cabbage and cold water rinse. Drain well or send through a salad spinner; set aside, until needed.
  2. In a salad bowl, prepare the vinaigrette; mix together the honey, rice vinegar, oil, lime juice and salt. Whisk together until smooth and saucy, set aside.
  3. Core and thin slice the apple; add to the vinaigrette, coat all slices to prevent browning.
  4. Chop the green onions, jalapeños and bell pepper. Add to the apples, stir to coat ingredients.
  5. Add the well drained cabbage. Toss to coat.
  6. Chill at least 1 hour or long enough for all ingredients to incorporate.

Great stuff! Vinaigrette based slaw is all we ever eat. I like the apple in this one. I sometimes make the dressing in a blender and throw in some cucumber. Cool, crunchy, delicious.

OMG, it's 8:30 in the morning on Mother's Day and I just made a batch of this to take to a bbq this afternoon, and I had to sit down and eat a bowl for breakfast! This is my go from now on forever for cole slaw. (I added a bit of Sambal Olek to the dressing because, well, I have to have my weekly ration of it.) This is brilliant!

Made this to go with hake fish tacos. I actually used a sweeter apple because that is all that I had. It turned out really nice, but I did wish I had those crisp, tart apples to go with the honey lime flavor.

This was fantastic! The flavors melded so nicely and the vinaigrette is superb. I really wish that this and other recipes that don't have CPs could get more traction on this site. It's really a shame that such an outstanding recipe is not seen by more members. We really really enjoyed it and I should have made a double batch.
