French Onion Dip

Once, out side of the French Quarter and on a back road near Thibodaux I had dip similar to this at a Cajun shrimper bar. —thirschfeld

What You'll Need
Ingredients
  • 16 ounces sour cream, save the non fat for another day
  • 1 1/2 cups yellow onion thinly sliced
  • 2 cups beef stock
  • kosher salt and fresh ground black pepper
  • potato chips
  • vegetable oil
Directions
  1. Heat a saute pan over medium heat. Coat the bottom with just enough oil to cover. Add the onions, season the with salt and pepper. Cook them slowly until they are a rich brown and very tender. Add the stock and let it simmer away until it is reduced to about a tablespoon. Remove it from the heat and let it cool.
  2. Combine the cooled onion soup with the sour cream and stir to combine. Taste it and adjust the seasoning as necessary. Serve.

making this now for superbowl. so far so good,smells amazing

I made this for a party and it was a hit! My version had a few substitutions. I used olive oil, whole fat Greek yogurt instead of sour cream and only one cup of stock. I also threw in one roasted garlic glove that I had left over from another recipe. Make this!!!

Just so you know--the son I live with requested this because we had a bag of Wavy Lay's and nothing to go with it. Of course, my well-stocked pantry had no sour cream and no beef stock, so I used 12 oz. of softened cream cheese and replaced the stock with a cup of water and the flavoring from a packet of ramen. Not as good as this version, but it worked. Thanks--we really like this stuff.

This sounds like an awesome potato chip dip. One question - are you reducing the stock down to 1 Tbsp?

yes, reducing it with the onions, otherwise it is to much liquid and it makes the dip to soupy
