Once, outside of San Francisco on a backroad near Napa I had something similar to this at a French Laundry. Just goes to show you you never know where you will find a great dip. —thirschfeld

What You'll Need
Ingredients
  • 2 cups sour cream, save the non fat for baking us full fat
  • 1/2 to 2 teaspoons white truffle oil, amount depends on how strong it is
  • 1/3 cup fresh chives, minced
  • kosher salt and fresh ground black pepper
  • good store bought potato chips or if you have the urge, clarified butter baked potato maxims
Directions
  1. In a bowl whisk the chives, sour cream and the truffle oil. Add a pinch of salt and some black pepper. Taste and adjust as necessary. Serve

I just tried this…I was surprised that such a simple dip would be that good….then again I like me my truffle oil. Nice job! And thank you!

that would be the one. Keller's is a lot different but mine is easier on the pocket book and well, quite honestly, this is no where near as good as his.

I sorta of have a nose for finding out of the way places that have very good food. But then that is like gambling, for every one time you win money at the casino there have been 10 times you have lost. No one talks about their loses.

Thirschfeld, I find the same goes for trying new recipes....so many duds! But the ones that make you close your eyes in gustatory ecstasy make it all worth it.
