Chai Oatmeal

This recipe combines two of my favorite comfort foods: chai tea and oatmeal. The oatmeal is scented with the wonderful flavors of cinnamon, ginger, and of course cardamom. —Ordinary Blogger (Rivki Locker)

What You'll Need
Ingredients
  • 1/2 cup water
  • 1 cup milk (I use skim)
  • 1 1-inch knob of ginger, peeled and sliced thin
  • 5 cardamom pods
  • 1 cinnamon stick
  • 4 black peppercorns
  • 2/3 cup oatmeal
  • 1 teaspoon maple syrup or honey, optional
Directions
  1. Combine the water, milk, ginger and spices in a saucepan. Bring to a boil over a medium flame and then immediately remove from the heat.
  2. Cover the saucepan and let the milk sit for about 1/2 hour.
  3. After the milk has been steeping for about 1/2 hour, drain it, discarding the ginger and spices and putting the flavored milk back in the saucepan.
  4. Add the oatmeal to the saucepan and bring to a boil over low heat. Simmer for about 15 minutes, until the oatmeal is as soft as you like it.
  5. Sweeten, if desired. Serve hot.

Could you infuse the milk ahead of time, and then put it in the fridge to use later?

What a great idea. I never tried it, but I don't see any reason it wouldn't work. Please let me know if you try it!

Oh goodness it's been months - but I did just finally try this and I think it worked great! I like to throw oatmeal in my rice cooker in the morning so having a big batch of the 'chai milk' ahead of time speeds this up for me.

I love the delicate chai flavor in the oatmeal - great recipe!

This is wonderful! For breakfast I often have oatmeal and a cup of Chai tea ... how clever to combine them!
