Red Grapefruit, Feta & Mint Salad

Serves 4

  • 2 red grapefruit, peeled and segmented
  • 1 cucmber, halved & sliced
  • 1 red onion, thinly sliced (soaked for 10 minutes in cold water)
  • 1 cup crumbled feta
  • 1 cup kalamata olives
  • 2 tablespoons chopped fresh mint
  • 2 tablespoons aged balsamic vinegar
  1. Place grapefruit, cucumber, red onion, feta, and mint in a bowl and toss with balsamic vinegar.
