Slow-Cooker Mediterranean Chicken Thigh Stew

This is one of the best slow cooker recipes I've come up with—just ask my family! They loved it. It has excellent flavor and is very easy to prepare in the Crock-Pot. —KarinCooks

What You'll Need
Ingredients
  • 6 to 8 boneless, skinless chicken thighs
  • Greek seasoning, to taste
  • 1 (14-ounce) can diced tomatoes with basil, oregano, and garlic
  • 1 (10-ounce) package frozen artichoke hearts, defrosted and patted dry
  • 1 lemon, juiced (about 3 tablespoons)
  • 20 pitted Kalamata olives
  • 1 teaspoon dried oregano
  • Feta cheese, for serving
Directions
  1. Lightly spray the inside of a slow cooker with nonstick cooking spray.
  2. Sprinkle both sides of the chicken thighs with Greek seasoning and place in the bottom of the pot. Pour the canned tomatoes, artichoke hearts, and lemon juice over the chicken. Add the olives and sprinkle with oregano. Cover and cook on low for 6 to 8 hours.
  3. Sprinkle each serving with a little feta cheese.

So good! I used fire roasted diced tomatoes and keeping with the Greek theme, served it with orzo pasta.

I was skeptical about this recipe but OMG, I was wrong. It was absolutely delicious and so easy to make. I still can't believe how wonderful the flavors were. Thank you.

Made this today and it was incredible! I never leave reviews but I just had to for this recipe. 6 1/2 hours and the chicken thighs were incredibly tender. Will definitely make again

I kept this on repeat last winter. Looking forward to having it back in rotation as temps get cooler. I find frozen artichoke hearts at Trader Joe’s. The feta adds a lot. Don’t skip it!

I made this as directed and it was so good I still think about it often, I can't wait to make it again. I didn't brown the chicken and it was still fantastic- my guest described it as "succulent-ass chicken" lol. I would agree, having a complimentary side dish to help sop up all the brothy-juice from this would be good. But holy smokes, this comes together so quickly, and is like WOWZA good.

Thank you so much, Karen for this flavorful simple dish. I salted and browned the eight boneless, skinless chick thighs in one tablespoon of olive oil before placing in the crockpot. I served the dish with fettuccine on the side-Yum! Next time I will omit the lemon juice because the flavor was a little sour for my taste.

This was delicious and easy! Ended up just braising it on the stove after I browned the chicken thighs.

First of all, this recipe is delicious. Second, don't make my mistakes, folks! Don't use canned artichoke hearts. They dissolved into mush. Also, brown your thighs before putting them in the pot! I put my thighs directly into the pot without browning, and it came out a little bland. I used frozen and then thawed thighs and the texture wasn't the best. Definitely use fresh meat and brown it first.

This recipe was amazing...much better than i expected! i browned the chicken in the instant pot and the sauteed zucchini instead of artichokes. i added quarted baby potatoes and cooked on high pressure for 15 min. Perfect!

So good!!!! Just made this today. Amazingly easy! We did it for 6.5 hours on low. It is so flavorful, so delicious, definitely serving at a dinner party.

So yummy! Sooooo easy!! About 10 minutes to prepare, press the 6-hour button, and anxiously await. I've made this a handful of times, and each and every time it is DELISH. Enjoy!

Impatient as I am, I made this in a pressure cooker. 15 minutes at high pressure (with b/s thighs, which I lightly browned first) the meat was as tender as slow cooked.

Made this last night and it was delicious!! I didn't have the time to cook it for 8 hours so I cooked it for about 4-5hours, it was perfect. The chicken was tender, flavorful and so so delicious!!
I recommend this recipe as it is very easy to prepare, its so health because you don't use butter, oil or salt!!!
I served it with a side of hot quinoa and will be making this again SOON!

Made this last night - it was great!

Definitely had to cook the entire 8 hours, and I used bone-in, skin-on thighs, which were really delicious.

Also, I recommend this is served with bread - don't waste any of the sauce!

What would be considered Greek seasoning?? I don't know if I can find this in my grocery store, but I am sure that I could find the individual components if you could give me a run down of what they are.
