For someone who almost died from anaphylactic shock at the age of 10 from eating a Brazil Nut, I could have gone two ways: been absolutely frightened to put another thing in my mouth, or become entirely enamored with ingredients and the things I could actually eat without dying.
I think it's safe to say, by my choice of profession, trade, and time spent, that I chose the latter.
After years of experimentation, discover of increasingly more sensitivities, and an adjoining augmenting creativity in the kitchen with technical application, I enjoy eating those "taboo" foods that I never thought I would be able to.
