Hot and humid the last few days so mai tais really hit the spot. Sadly I am now out of orgeat so a daiquiri will have to be the next round.

A bourbon Rickey variation with lemon instead of lime, and peach mint-Angostura ice cubes with pepper.corns. So refreshing!

What my neighbors love is what I call my "Jailhouse Margarita". Tequila, Mexican Brandy, Grand Marnier, lime juice, simple syrup and a lime twist. Proportions to taste. Salt the rim or don't. Shake and serve up or on the rocks. It's a concept rather than a recipe from inside a Mexican detention facility. Thus "Jailhouse Margarita".

Our summer cocktail is Jeffrey Morgenthaler's Amaretto Sour. I made the brandied cherries recipe from his book to use as a garnish.

A few months ago at the Portland Saturday farmers market, a vendor had small pots of mint plants billed as "Mexican; ideal for Mojitos." I brought one home, planted it in a large container, and now I have an enormous, endless supply of deliciously fragrant mint sprigs. I decided to meticulously follow Jeffrey's Mojito recipe, and the results have been outstanding (especially refreshing this past week in warmer-than-usual Portland). If I may say so, they are even better than my previous favorite Mojito served at Washington DC's Black Salt restaurant. Next: Mai Tais!
