Some encounters are more serendipitous than others. You might work with someone your whole life and never become very close, or you might meet someone once and the encounter has a lasting impact. It could be something that was said, a piece of advice, a shared experience. In my case, it was a recipe.

Bernard Vanderhooven is an antiques dealer I met by chance in Bordeaux. He is a real bon vivant and we got on like a house on fire. His recipe for garbure, a hearty soup studded with chopped vegetables and pork, is simply the most comforting food you can imagine having on a dark winter’s night. When I make it, I sometimes think of Bernard coming into his lavishly decorated apartment after a long cold day at the antiques fair. I imagine him taking off his hat, greeting his cat, pouring himself a nice glass of Bordeaux, and enjoying a bowl of the soup he would have made the night before. I imagine he listens to jazz. Garbure de Pyrénées 

Serves 6 to 8

2 cups dried white beans
2 pounds smoked ham hock
1/4 cup (4 tablespoons) rendered duck fat, or extra-virgin olive oil, or unsalted butter
6 carrots, halved crosswise and cut into 1 1/2-inch sticks
5 leeks, white and pale green parts, coarsely chopped
4 onions, quartered
5 garlic cloves, halved
1 medium Savoy cabbage, cut into 8 wedges
Fine sea salt and freshly ground black pepper
6 small to medium russet potatoes

Lentil soup, with pancetta, fresh basil, and a good splash of red wine vinegar. The red wine vinegar really lifts the soup and gives it an almost sweetness, and it hits the perfect note on a chilly night!

Soups are an absolute favorite of mine, being a whole food group in itself in my eyes. My favorite soup to cuddle up to on cold winter nights is a creamy basil tomato bisque with a grilled brie sandwich for dunking. Or, if I should be so lucky, my mother's rice congee with chicken topped with caramelized shallots. I already feel warm just thinking about it!

My favorite soup in the cold weather is one that I picked up while living in Spain. It is a variation on a chicken soup that is made with lush Roma tomatoes, green beans and black olives. A blend of cinnamon sticks, bay leaves and cumin add incredible flavor and aroma to an already rich base. Last but not least, the final ingredient is oat groats, which once fully cooked release their starch and thicken the soup to an almost chowdery consistency. It is one of the most delightfully filling and warming soups I have ever made, all of which makes it ideal for the fall and winter months.

My favorite soup this past year has been a recipe by Marcelle Hazen. It is a cabbage and rice Soup that is so simple but very satisfying and mellow. This sounds delicious and I'm always a fan of beans!

I like a black bean pumpkin soup made with fresh pumpkin. It is a little spicy and brings the season of fall into the kitchen. Works great for a meatless Monday meal with some nice crusty bread.

through the fall and winter, i make a chickpea-noodle soup weekly that is heavy on both thyme and onion, and as the weather becomes more frigid the soup is thickened with a touch of pureed cannelini beans and roasted garlic.

Nothing hugs my insides quite like a bowl of matzo ball soup on a chilly day. My recipe is homey and filling, while still fresh and bright thanks to the carrots and dill. I always keep a couple of containers of homemade chicken stock in the freezer for all my matzo soup emergencies.

There's a wonderfully warm and slightly spicy Bulgarian tomato soup from Sundays at Moosewood that I return to every winter. It's served with dill dumplings that somehow work perfectly with the richness of the tomato. It's light enough that I still have room for dessert, too!

A great cold winter soup for me is Chicken Posole. I make chicken stock from a leftover carcass then add garlic, onion, carrots, tomatillos, the leftover meat, hominy, mexican oregano, lots of lime and shredded cabbage at the end. Serve with hot corn tortillas..delicious.

Homemade chicken noodle soup. I roast a chicken nearly every Sunday night, then I use the carcass to make stock (including the lemon and garlic head I put in the cavity for roasting). I use the traditional vegetables and wide noodles but my secret ingredient is the leftover chicken juice from the roasting pan. That and the zest of a lemon add just the right touches to give the soup soul.

Mine is a real kid loving soup that's a bit strange. It's called Nonnie's Spaghini Stick-to-Your-Ribs Soup. It's beef stock, tomato juice, diced tomatoes, 1 lb. of ground round, kidney beans, shredded savory cabbage and angel hair pasta. Everyone who has had it loves it.

I love doing a homemade chicken soup with fresh pasta....but I often change it up. Sometimes with east Asian ingredients (like ginger and bok choy) and rice, or Thai inspired with coconut milk, lemongrass and cilantro. I've done chicken soups that feature several different types of allium (onion/garlic), and ones that don't feature chicken at all (duck is a wonderful stand in). Endlessly versatile and never convenient.

My favorite winter soup is a white bean and kale soup. White beans, but of smoked paprika, handful of kale, butternut squash or yams, onions, garlic, vegetable stock, and a splash of vinegar to give it a kick! I purée some of the white beans to give it some texture and mix it up by adding a pork sausage once in a while.

I make a potato and dumpling soup that comes from my Slovenian side of the family - very simple, but very comforting. Potatoes and caramelized onions and then add homemade dumplings and cook. If you want a meatless version, that's it or you could add bacon or pancetta to it if you like.

My favorite soup of all time is arroz caldo, a Filipino dish. Literally it means "rice soup". You sweat an onion, a whole head of garlic cloves (smashed), and a lot of sliced ginger, until fragrant. Then add diced raw chicken, cook until no longer pink. Then add short-grain rice and chicken broth, and simmer until done. Serve with any combination of fish sauce, crisp-fried chopped garlic, sliced green onion, and sliced hard-cooked egg. So comforting when it's cold out! Or even when it's not -- I used to get a version of this whenever I was sick as a child. (First runner-up is my aunt Dolly's fabada Asturiana, a bean soup/stew chock-full of sausage, ham, and sometimes chicken, plus tons of garlic.)

I make a vegetable soup and add sunchokes (Jerusalem Artichokes) and other veggies from my garden and use chili powder for a different taste and puree it just because I can. Makes the additions of my dried, frozen and canned produce so much easier.

I tend to be partaking in the Serbian Orthodox Nativity fast in wintertime, and find vegetable-based soups are great, hearty ways to finish the day. I love the Mayorquina soup from Elizabeth David's French Country Cooking. It's cabbage, onion, garic, leek and herbs, cooked with home-roasted red peppers and home-canned tomatoes. You serve it with toasted brown bread in the bowl and a little olive oil drizzled over. If one is not fasting, an egg poached in the soup is great too. Elizabeth says that the soup is from Perpignan, in the Rousillion region of France, where many Catalans live (hence the name "Mayorquina").

Hi! My favorite winter soup is the slovenian "jota". It's made of sour cabbage, dried white beans, smoked pork meat and potato. It's so good I can hardly stop eating it once I begin.
Mimi, I've been following your blog for quite some time now. I just LOVE IT. It warms my heart, it gives me plenty of ideas and my family is happy I found it since many recipes I found there are often on our table. Thank you!

I live in multi-cultural Los Angeles and there are many hot soups to choose from: Japanese Ramen in Miso garlic broth, Vietnamese pho with lemony beef broth, onions, cilantro anf beef filets or Thai wonton soup w shrimps and vegetables. Last winter I stopped working at a very stressful job. I finally had some freedom and the first day out of work I found myself moseying around Union Square Market. In NYC it was one of those insanely cold days during January when wool socks didn't even help insulate your already insulated winter boots. My moseying led me to making Ina Gartens' fantastic lentil soup recipe with hearty green lentils, fresh leeks, and a warm hint of cumin. My friends, boyfriend, and I ate it for three days straight with fresh challah. A good friend of mine still requests it incessantly, especially when she's sick, even if it's the dead of summer. It's that comforting.

When the wind is blowing and the evenings are short, we love to make New England Clam Chowder with Organic White Sweet Potatoes! Living on the coast allows us fresh sweet clams and the white sweet potatoes are a perfect compliment as well as fresh thyme out of the garden. Dessert is usually always a fresh pie!

I love to make chicken wild rice soup in the winter! It reminds of visiting the History Museum with my dad when I was a kid (we always stopped for wild rice soup in the museum cafe afterwards). The wild rice is a perfect texture alongside the creamy broth.

My go to winter soup is my great-grandmothers vegetable soup: tomatoes, onions, corn, lima beans, green beans, small red potatoes all in a tomatoey broth. Add some hot buttered cornbread, and those long winter nights are not quite as dark!

My favourite winter soup is one of our favourite soups in France: la soupe à l'oignon: Chopped onions slowly cooked in olive oil with thyme, to which we add chichen stock. I serve it steaming hot with cheese croûtons, and burn my tongue each time but what a comforting feeling such simple ingredients can bring!
