This would be the official national Irish après-ski drink if the green isle's rolling hills turned into snow-topped mountains and the ruddy-faced codgers lining the bars of Dublin's pubs came around to the idea of a chairlift. It's got the rich warmth that we need from a good snowy-day hot chocolate, plus whiskey's sharp uppercut and a pour of Guinness for good measure because we're in Ireland, remember? 

So whether you're chilly and drained from a day of skiing, or feeling like you need a little more Irish in your life than the Irish exit you pulled at the bar last weekend, or simply looking for new ways to spin your nightly hot chocolate cha-cha, stir together this Irish Hot Chocolate. You'll be knocking out cocktail hour and dessert in one fell swoop, which is fitting: We Irish are an industrious bunch.

Irish Hot Chocolate

Serves 6

One 12-ounce bottle Guinness or other stout
1/4 cup cocoa powder
2 tablespoons granulated sugar
1 pinch kosher salt
3 cups whole milk
8 ounces chopped dark chocolate
4 ounces Bailey's
4 ounces Bushmill's Irish Whiskey
