If you've been paying attention, you've realized by now that we have a small love affair going on with meatballs. Recently, we made one batch into five dinners, tossed them with penne and broccoli for a weeknight meal, and stocked up on gravy boats for a contest-winning Swedish variation. And why not go public with our love of the dinnertime classic? Meatballs are among the more versatile proteins of the meat world: They're highly customizable and pair with just about anything. Either go the classic route and toss them with spaghetti, serve them on toothpicks at your next party, douse them in a spicy-sweet Korean glaze, or stuff them into a sub. Or, go Greek.

This recipe for Greek meatballs with yogurt sauce from foxeslovelemons is as refreshing as it is easy to pull together. All you need to do is combine both light and dark ground chicken (which helps to keep the meatball moist) with herbs like oregano and mint, then bake them and serve them over a parsley-rich Greek yogurt sauce. Foxeslovelemons reserves meatball making as her New Years Eve tradition, but we'll be making these year-round.

Greek Chicken Meatballs

Makes about 16 meatballs

For the meatballs:

Nonstick cooking spray
3 garlic cloves, minced
1 egg, lightly beaten
1/3 cup minced white onion
1/4 cup panko breadcrumbs
1 1/2 teaspoons dried oregano
1 teaspoon dried mint
1/2 teaspoon kosher salt
1 pound ground chicken (I like a mix of white and dark meat for a moist meatball)
Crumbled feta cheese, for garnish
Finely chopped English cucumber, for garnish

For the yogurt sauce:

1 cup Greek yogurt
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh dill
1/4 teaspoon ground black pepper

Wow! What a treat this was. I gotta say that this was one of the best recipes for meatballs I've had. I did substitute a few things that I already had on hand, like turkey meat instead of chicken, threw in a bit more dried mint (which made it even more delicious!), with the yogurt sauce I added some garlic, lemon, and finely diced English cucumber like the Greeks do it. Served it with rice. Overall, it was the perfect dinner and my husband savored every bite! Lol.

It looks very tasty! However, if by Greek sauce you mean tzatziki, well, you might wanna add some vinegar, extra virgin olive oil and, of course, garlic!!! If you haven't tried it before.......you re welcome!!!
