A Leftover-Only Bagel Lunch

As a defiant response to sad desk lunches, the Food52 team works to keep our midday meals both interesting and pretty. Each week, we'll be sharing our happiest desk lunches—and we want to see yours, too.

Today: Random leftovers made better by a bagel.

Rachel Christensen called this lunch we made, “the lunch everyone will ask you about until you start to hate them.” If you make your own, they might not like you very much, either, when you tell them it was assembled exclusively out of leftovers.

To cobble it together, we toasted Black Seed rye bagels from brunch a few days prior, schmeared on some avocado from a shoot, added hard-cooked eggs from testing, and topped our open-faced towers with the last of the lettuces from lunch with Diana Henry. Call it a tartine and you'll totally forget that your leftover ingredients were neglected for days.
