I was once asked, in a bar, unprecedented, what my ideal daiquiri ratio was.   

It was a perfectly good question, indicative of knowledge that good bartenders often judge their brethren on their ability to balance rum, lime, and sugar in a cocktail that can stand on its own two feet. (To wit: They have a whole section on daiquiri ratios in the Death & Co book.) 

I remember wanting to say: big, frozen, in a neon plastic glass with a curly straw. I wanted to offset our start. I wanted to go for surprise. And most nights after most long days, I prefer to drink my first cocktail, not expound on it. (Maybe I’ll want to talk about the second.)   

I don’t remember what I did say, but even though, in that moment, I was using the frozen daiquiri as a counterpoint to higher cocktail culture, I don’t really feel that it is: Frozen daiquiris are good. They are carefree and practically vacation in a glass and you are fooling yourself if you say you don’t like them. You’re not fooling us: Lime and rum and sugar and ice are practically hardwired to be likable.   

And this cocktail is hardwired to be dead simple: Pour ingredients into blender. Press blend. Pour into large vessel. Add a curly straw if you want—you can still be proud of the ratio.   

Frozen Daiquiri

Makes 5 drinks  

8 ounces light rum 
6 tablespoons freshly squeezed lime juice 
3 teaspoons superfine sugar 
4 cups crushed ice
Lime wheels for garnish (optional)

3oz of orange juice
2 oz of pineapple juice
1/2 Shot of grenadine
1/2 Shot Myers rum
Sever over ice and garnish with a cherry and pineapple slice

I love a spicy grapefruit paloma!
Drink:
1 oz lime juice
½ tsp agave
1 serrano pepper slice
2 oz fresh grapefruit juice
2 oz blanco tequila
2 oz jarritos style grapefruit soda

Salt rim:
2 teaspoons kosher and/or sea salt
1 tsp chili powder
Lime wedge, for lining the rim
Small grapefruit wedges, for garnish

50ml Havana Club Añejo 3 años
10ml apricot brandy
25ml fresh pineapple juice
10ml sugar syrup
20ml fresh lime juice

hot pepper vodka
peach vodka
passion fruit syrup
apricot nectar

I'm a Miami girl, so I call this variation of a mojito the Biscayne Baybreeze:
8-10 mint leaves
3 limes, squeezed and dropped
.5 oz simple syrup
2 oz coconut rum
1 oz cranberry juice
.5 oz pineapple juice
Shake it up, and then top it with sprite and a nice pineapple wedge!

Nutty Captain Passion
1 cup Captain Morgan Spiced Rum
½ cup Amaretto
2½ cups passion fruit juice
2 cups Pineapple juice
Fresh raspberries
Ice
Blend or throw in a pitcher to serve and enjoy; good on ice or served "martini" style

My all time favorite tropical drink is the dirty banana!
1 oz coconut rum
1 oz banana liquer
1 oz kahlua
1/2 c half and half
1 frozen banana
4 ice cubes
Blend ingredients together until smooth. you can also add whipped topping and chocolate syrup on top for a little something extra

1 oz Stoli Vodka
1 oz Southern Comfort
.5 oz Sloe Gin
.5 oz Amaretto
.5 oz Triple Sec
2 oz Orange Juice
2 oz Pineapple Juice
1 oz Lime juice
pour all ingredients into a mixing glass shaken and serve over ice

1 -1/2 ozs Absolut Vodka
3/4 oz southern comfort
1/2 oz amaretto
2 ozs pineapple juice

1/2 oz fresh lime juice
ginger ale
garnish with fresh lime

So, my sister and I have two favorites, both using Kinky. One is the "Dew Me"...diet Mountain Dew and Kinky (the pink one). Tastes almost peachy...YUM! The other? The "Glow Stick"...also diet Dew and Kinky...this time the blue stuff. Looks just like a yellow glow stick. Both are simply fantastic and oh-so easy!

Pineapple & Mango Rum Cocktail
INGREDIENTS

2 1/2 small ripe mangoes, peeled and cubed (about 2 cups), plus 1/2 mango cut into slices with skin, for garnish
4 ounces best-quality golden rum
4 cups fresh pineapple juice (from a 4 1/2-pound pineapple)
Fresh tropical fruit, such as dragon fruit and star fruit, for garnish
DIRECTIONS

Puree mangoes, rum, and 1/2 cup water in a blender. Pour 2 ounces puree into each of six 12-ounce glasses. Fill glasses with ice, and top off with pineapple juice. Garnish with tropical fruit.

I LOVE a Blue Hawaii !

INGREDIENTS
3 ounces pineapple juice
3/4 ounce white rum
3/4 ounce vodka
1/2 ounce lemon juice
1/2 ounce blue Curacao
1/4 ounce simple syrup
Ice
Cherry and a pineapple wedge (for serving)

DIRECTIONS
In a cocktail shaker, combine pineapple juice, rum, vodka, lemon juice, blue Curacao, and simple syrup. Shake and strain over ice. Serve with a cherry and a pineapple wedge.

Italian Surfer With an Attitude...8 oz banana vodka, 8 oz amaretto, 4 oz dark rum, 4 oz light rum, 4 oz cranberry juice, 4 oz pinapple juice. Blend, pour over ice. Top with an umbrella and cherry! Great drink. Beautiful colors, smells good, but has a strong kick!

Rum Punch - We make ours in a pitcher. So, i a pitcher add 1 1/2 cups of a light rum, 3 cups of freshly squeezed OJ, 3 cups of pineapple juice, 3 tbsp of lime juice, 2 tbsp of cranberry juice and lastly 2 tbsp of grenadine. Mix well and pour of a glass of ice. Great light Summer drink!

Key Lime Lemonade

Start with fresh squeezed lemonade.

Pour glass 3/4 full of fresh lemonade

1 1/2 cups ice cubes, crushed
3 tablespoons frozen lemonade concentrate
2 tablespoons coconut rum (such as Malibu)
Lime wedge
Place ice, concentrate, and rum in a blender; blend until slushy. Garnish with lime wedge, if desired.

Midori pina colada (I absolutely love especially on a cruise hehe)
For 1 Servings
2 oz midori melon liqueur
2 oz coconut milk
1 oz coconut rum
4 oz pineapple juice
ice
1 In a blender, combine ingredients with ice until well blended.
2 Pour into tall glass and garnish with cherry and or pineapple or orange garnish.
3 Insert straw (maybe an umbrella ) and sip and enjoy.

The Perfect Mojito
(makes one)

1 ½ oz BACARDI Superior Rum
Club Soda
12 mint leaves
½ lime
2 tbsp simple syrup
(1 tbsp sugar can be used instead of the simple syrup. If using sugar, muddle it in the first step with the min leaves and lime)

Muddle 12 fresh mint leaves and 1/2 a lime. Cover with 2 Tbsp. of simple syrup and top with ice. Add 1 1/2 oz of BACARDI Superior Rum and top with Club Soda. Stir well and garnish with a lime wedge and sprig of mint (and a stick of sugarcane if you can find it!)

Bushwacker

2. oz Coconut Rum
2 oz. Vodka
2 Oz. Bailey’s
2 oz. Kahlua
2 oz. Amaretto
2 oz. Cream of Coconut
Chocolate Syrup
Pinch of Nutmeg

Drizzle chocolate syrup in a glass. Combine all ingredients in a blender, blend with ice, pour in the glass. Sprinkle with nutmeg.

Chunky Monkey (so good!)
3 oz creme de banana
3 oz amaretto
3 oz rum
3 oz creme de cacao
4 tbs cream of coconut
3 oz half & half
1/2 banana
2 cups ice

Place all together in a blender and blend until smooth and creamy!! Can also substitute vanilla or chocolate ice cream for the ice. Pour into your favorite glass, top with whipped cream and a cherry!

Love mojitos - classic recipe

INGREDIENTS:
10 fresh mint leaves
1/2 lime, cut into 4 wedges
2 tablespoons white sugar, or to taste
1 cup ice cubes
1 1/2 fluid ounces white rum
1/2 cup club soda
DIRECTIONS:
1. Place mint leaves and 1 lime wedge into a sturdy glass. Use a muddler to crush the mint and lime to release the mint oils and lime juice. Add 2 more lime wedges and the sugar, and muddle again to release the lime juice. Do not strain the mixture. Fill the glass almost to the top with ice. Pour the rum over the ice, and fill the glass with carbonated water. Stir, taste, and add more sugar if desired. Garnish with the remaining lime wedge.

Frozen Strawberry Margarita:

4 shots of Tequila
4 shots of Controy
Juice of 1 lime
1 Cup of fresh strawberries
2 Cups of ice
- In a blender, add your alcohol, lime, ice and strawberries.
Blend till all ingredients are pureed.
Be sure to sugar the rim of your glass before serving.

You'll Need:
2-oz cucumber tequila, chilled (recipe follows)
1 lemon wedge
1 lime wedge
5 to 10 fresh mint leaves
5 to 6 oz. lemon-lime soda, chilled

Blend crushed watermelon and ice in blended

Fill 12-oz tumbler with watermelon ice mix

Pour tequila over watermelong ice.

Squeeze lemon and lime wedges over ice.

Add to glass.

Put mint leaves in one hand. Clap between hands several times to release oils. Drop leaves in glass. Top with soda. Stir gently. 1 serving

Caribbean Sea

1 oz Blue Curacao
6 oz pineapple juice
1 oz banana liqueur or banana rum (Cruzan brand rum preferred)
1 oz mango rum (Cruzan brand preferred)
1 oz coconut rum (Cruzan brand preferred)
1 oz Triplesec
splash of cranberry juice

Start with 1 ounce of Blue Curacao, followed by 6 ounces of pineapple juice. Then add 1 ounce of banana liqueur (although banana rum will also work if you don't have liqueur) followed by 1 ounce of mango rum, 1 ounce of coconut rum, and 1 ounce of Triplesec. We prefer Cruzan brand rum for a smoother taste, but any brand will work. Top it off with a splash of cranberry juice. Shake or stir and serve over ice. Garnish with a slice of pineapple. Enjoy a taste of the Caribbean Sea!

This was my aunt's recipe which she always made when we visited. My first taste was 43 years ago! :)
Mai Tai's
1 small can concentrated orange juice
1 small can pineapple juice
1 1/2 shots white Rum per drink
Fill blender with chopped ice adding above ingredients.
Optional: Add Grenadine & coconut powder
Then blend until desired smoothness.
Garnish with spear as follows: green cherry, pineapple chunk, red cherry, orange slice

3½ ounces soju, such as Jinro
3½ ounces juice (aloe, grape, mango, peach, pineapple, orange or pear)
Splash of soda water

Pour the soju into a cocktail shaker with ice. Shake vigorously, and strain into a large martini glass. Top with the juice and a splash of soda.

In a Boston shaker, combine 1 oz coconut rum, 1 oz Luxardo cherry, 2 oz dark rum, 2 oz pineapple juice, a splash of orange juice, and a dash of orange bitters. Shake and pour over ice. Garnish with a slice of lime and a maraschino cherry.

Ginger Strawberry Mojito
Ingredients

1 tsp. chopped fresh ginger
4 medium strawberries hulled and quartered, plus 1 for garnish
12 sprigs fresh mint, plus 1 for garnish
1 tablespoon fresh lime juice

1 tablespoon (1/2 oz.) brown sugar
4 tablespoons (2 ounces) spiced rum
3 tablespoons (1 1/2 oz.) ginger ale

Place chopped ginger in a cocktail shaker and muddle. Add quartered strawberries, mint sprigs and lime juice and muddle again. Add ice, brown sugar, and rum. Shake vigorously to combine. Strain into double old fashioned glass over fresh ice. Top with ginger ale. Garnish with remaining
strawberry and mint sprig.
Strawberries and ginger combine to make a unique and refreshing take on a mojito, the traditional Cuban cocktail, perfect to serve on a cruise!

Hibiscus Zing!
Great as a cocktail or mocktail frozen or on the rocks
Juice of 1/2 fresh lime
simple syrup
1/2 cup hibiscus tea steeped till strong (or use fresh hibiscus flowers to make your own supply of hibiscus syrup that lasts for weeks in fridge)
2 oz tequila (but tastes great with rum also)
1/4 cup simple syrup (if not already added to the tea syrup)
Pour over or blend with ice
top with splash of club soda or seltzer
garnish with a lime slice or even better; hibiscus flowers
stunning to look at as well...

Asian Pear Spritzer
Makes about 6 drinks
1 cup white rum
1 cup freshly pressed Asian pear juice
1 teaspoon lemon juice
3/4 cups honey
1/4 cup sugar
1 (4-inch) sprig fresh rosemary
1 (1-inch) piece fresh ginger, peeled and cut into coins
Small grating of fresh nutmeg
Ice
Soda water

A refreshing cocktail for a day on the cruise! As an asian, I would like to introduce an asian cocktail drink! Easy to make for a beginner drinker like me.

Red Lotus:
1 cup ice cubes
1.5 fluid ounce jigger lychee liqueur
1.5 fluid ounce jigger vodka
1.5 fluid ounce jigger cranberry juice
A few drops of apple vinegar

Alternative to cranberry juice would be grape juice or red grapefruit or pomegranate juice (I prefer a mix of red grapefruit and pomegranate).

Lava Flow
1 oz light rum
2 oz pineapple juice
6 oz piña colada mix
1 oz strawberry purée
Blend rum, pineapple juice, and pina colada mix with 1 cup of ice. Next, take a glass and coat the inside with strawberry puree. Pour in colada blend. Finally, use a spoon to drag the strawberry puree up through the colada drink, creating a pink stripe. Garnish with a pineapple chunk, and serve.

Fill a shaker with ice, add the rums, lemongrass syrup and lime juice. Shake and strain into a martini glass or coupe. Garnish with thin strip of lemongrass.
For the lemongrass syrup:
2 stalks lemongrass, coarsely chopped.
2 c. water
1 c. sugar
Bring ingredients to boil in a saucepan. Reduce heat and simmer with lid partially covering for 15 minutes. Strain mixture and thoroughly cool. Yields 2 cups.

Rum And real Passion fruit, sooo good.
cook 1 cup passion fruit with 3/4 cup sugar until sugar is diisolved do not boil. Strain this through a sieve. let cool. fill a tall glass half way with ice cubes. add rum to your taste, add a good splash of passion fruit juice and top off with cold water, stir and enjoy. Careful you don't taste the rum and you want another and another and before you no it you are very tipsy.

My absolute FACE is a Coconut Creamsicle Margarita (credit for recipe is below it---my guests rave about these!):

Ingredients:

2 ounces grand marnier
2 ounces orange juice
1 1/2 ounces silver tequila
1 ounce lime juice
1 ounce coconut water
1 ounce canned light coconut milk
1 ounce simple syrup
unsweetened shredded + toasted coconut for glass rims
orange + lime slices for serving
Directions:

To rim glasses, fill a plate with coconut. Rub honey or left over frosting on the rim - anything sticky that the coconut will stick too - then place on the plate to coat with coconut. Fill glass with ice.

Combine all grand marnier, orange juice, tequila, lime juice, coconut water, coconut milk and simple syrup in a shaker and shake well for 30 seconds. Pour over ice and garnish with wedges of orange and limes. Drink!

Sweet Heat:
2 ounces vodka
1 1/2 ounces pineapple juice
1/2 ounce simple syrup
3 slices jalapeño, thinly sliced
2 slices ginger, thinly sliced
1 lime wheel for garnish

In a cocktail shaker, muddle together the jalapeño, ginger, simple syrup. Add ice, vodka, and simply syrup. Shake vigorously. Pour into a glass and garnish with a lime wheel.

Pimm's Cup Float!
Made with Ginger Pimm's sorbet and sparkling lemonade!

Sorbet
Ingredients:

2 cups water
2 cups sugar
1/4 cup fresh ginger, peeled and chopped
1/2 cup water
3 tbsp. Pimm’s
1 lemon, juiced

Method:

In a medium saucepan, add the water and sugar. Bring to a simmer until sugar is dissolved.
Lower heat and add ginger. Allow to infuse for 30 mins. Cool.
Once the syrup has reached room temperature, add water and lemon juice (adjust to taste).
Add ginger syrup to ice cream maker/sorbetière and start.
When the mix starts to slush, incorporate the Pimm’s.
Finish the freezing process.
Serve immediately or store in airtight container for up to 3 weeks.

Sparkling lemonade
Ingredients:
1 lemon, juiced
2 tbsp simple syrup
2 cups sparkling water

Method:
Mix all ingredients together

Combine!
Serve a scoop of the Pimm's sorbet with lemonade with a bit of limoncello if you want an extra kick!

Lime Sorbet Daiquiri

• 6 oz. light rum
• 3 scoops of lime sorbet
• 1/2 cup crushed ice
• 2 tbs lime juice (juice from one lime)
• Lime wedges – for garnish
• Dusting of cacao or cocoa powder (optional)

Put the rum, lime juice and ice into the blender and blend until smooth. Then add the sorbet and blend.
Garnish with lime wedges. (I like the smell of the cocoa, and lightly dust drinks before serving)
This is great if you think “orange” instead of lime (Talenti makes a great blood orange sorbet…) Just substitute lime sorbet and wedges for orange.

Serves 1-5, depending on whether or not you want to share.

Rhubarb G&T! Every summer we make a simple syrup with the rhubarb from our garden. Boil it down with a split vanilla pod and sugar. Strain the pulp out until it's just a beautiful pink syrup. Add to your gin and tonic and watch the sun set over your city.

POGOLA- Best Island Beach Adult Beverage – or any beach, or any time! You will need POG drink- only available in Hawaii that I know of – so you either need to go to Hawaii, be on a cruise going to Hawaii and hope they have POG or make your own with individual juices of Passion fruit, Orange
Light Rum, Dark Rum, Spiced Rum, Coconut Rum, 151 Rum- did I say Rum?
Fresh Pineapple or canned if you don’t have fresh-save juice! Maraschino Cherries w/juice or grenadine- (optional if you have and like- fresh Mango, Papaya, lychee and ramatam fruit)
Like the islands this drink is very casual and has no strict measurements- Take a gallon thermos jug with handle- This cooler and can be shared but it’s recommended that each person have their own cooler- About 7:30am fill about ¾ with ice- then add cut pineapple chunks, some cherries, the other tropical fruit of your choice . Then add about 1 ½ quart of the POG, then about a cup of light rum, about 1/3 c of the coconut rum, about 1/3 c of the spice rum, about 1/3 c the dark rum and top with about ¼ c of the 151. Stir and taste! If you go WOW- then it must be perfect! Add more ice or juice or rums or fruits to fil the jug- Proceed to beach with jug and thermal cup with lid and straw- a wood spoon helps to take some fruits out with each fill up- When jug is empty – time to find your designated driver to stop at the shrimp trucks for dinner, nibble on the fruit for desert on the way home!
For home consumption- this is great served frozen!

Coconut Margarita

Toasted shredded coconut
1/2 cup freshly squeezed lime juice, plus 2 tablespoons for glasses (about 5 limes)
3/4 cup cream of coconut (can use Cocoa Lopez)
1/2 cup plus 2 tablespoons tequila
1/4 cup orange liqueur

DIRECTIONS
Pour 2 tablespoons lime juice into a shallow dish. Place coconut mixture in another dish. Dip rims of two cocktail glasses in lime juice, then in coconut mixture, coating well.
Combine remaining ingredients with 1 cup ice in a blender; puree until smooth. Divide evenly between prepared glasses, and serve immediately.

In a shaker combine ice, vodka, pomegranate juice, and triple sec and shake well. Use the lime wedge to wet the rim of a martini glass and then dip in the rimming sugar. Strain the contents of the shake into the rimmed glass and top with club soda. Garnish with lime wedge and/or a few pomegranate seeds.

I love fresh coconut and rum - great cocktail for a refreshing summer night!
You'll need a good blender, crushed ice, Caribbean Coconut gelato, Fine Sugar or Powdered Sugar, COCONUT RUM, , Fresh Limes, Frozen, Fresh Coconut a pretty glass and a straw! and of course, a partner to share!
Fill your blender half full of crushed iced.
Add:
Your fav coconut rum - I prefer Malibu Coconut Rum - 2 Cups for starters! Add the remaining ingredients of the juice of a lime, 2 Cups of the gelato, Add the Sugar for your taste - Sweetness it is!
Blend to the consistency of a smoothie.
Garnish with fresh coconut and a lime slice. Enjoy. Very Easy. Quick. AND Smack Down Delicious!
(If Time Permits - garnish with toasted coconut - it's the bomb!)

1 sprig of mint and basil

1 oz Soju, or vodka (any clear tasteless spirit)
1 oz Lychee vodka (soho is a a good brand)
2 slices of lime
ice
soda water

Muddle everything together except ice, and soda water. Make sure to use some muscles! Fill a glass with ice, pour concoction into a sieve over the ice, top off with soda water and stir. Ta Da!

1 Watermelon (small, seedless) or Half a regular watermelon (seeds removed)
1 pound Organic Strawberries
12 ounces Top Shelf Vodka
1/2-3/4 Cup Cane Sugar
Juice of 1 lemon
1-2 Fresh mint sprigs
4 cups Ice
Remove the rind and cut the watermelon into cubes, hull the strawberries and place in a large non reactive container. Pour the vodka over the fruit and freeze overnight. Place the frozen fruit, sugar, vodka, ice, lemon juice and mint. Blend and pour.
