If you sub vegetable stock for chicken stock, it looks like three of these ten recipes are vegetarian.

The roasted red pepper soup with corn is one I will have to try. I love soups with fresh corn, which is in season right now and so tasty. I made a recipe, which the whole family loved. It is here:
