Oh my goodness - well, being so fortunate as to own Mizuba Tea Co (found in Food52's shop), I bake with Matcha all day every day. Matcha chia seed pudding, matcha salad dressing, matcha shortbread...we have a Matcha hummus recipe on our website...! (http://www.mizubatea.com/blogs/tea-cuisine)

But - I've also made Earl Grey tea biscuits very similarly to the Rooibos listed above.

Very fond of using Lapsang Souchong as well! In breads, glazed on meats...The smokey flavor is a wonderful, natural, delicious addition to many dishes.

My favorite baked good with tea is actually the Red Rooibos + Gala Apple Bread I found on this site (a total crowdpleaser!). I also love matcha shortbread.

So many options! That rooibos apple bread recipe looks amazing, it is on my must-try list. Matcha shortbread is my go-to!!! I must make it so often that it didn't even occur to me to include :)
