This morning Punxsutawney Phil, the world's most reliable rodent weather-teller, did not see his shadow. A member of Phil's inner circle read, "An early Spring is my forecast!" You (and Bill Murray) know what that means: Bring on the ramps and the snow peas and the artichokes!

Spring is coming! (Right?)

But not quite so fast: It's 34° F in Phil's Pennsylvania, which doesn't feel like spring. So maybe let's just pretend for a while? Here are 9 winter dishes that are so bright they feel like spring (which, if you're a believer in groundhog folklore, is thankfully not so far off):
