Sautéed onions and garlic with quartered Brussels along with garlic slices, salt n pepper with asparagus as sides, pounded chicken breasts marinated in pickle juice then coated with egg, flour n seasoning, and fried till cooked.

Salmon grilled with lemon wedges! The juice from the lemon soaks into the salmon and tastes oh so fresh and springy. Serve it along a light green salad and I'm a happy camper.

Salad bar night at our house--heat up the leftover Easter ham, sautée asparagus, rutabaga, butternut squash (it's still early in the spring, right!), toast walnuts in the pan. Throw it all on top of lettuce (better if it's from the garden), add vinagerette and yum.

The springiest stove-top meal I can imagine is a quick saute of asparagus, fresh peas, and oyster mushrooms in butter. Add a bit of fresh mint, throw it on some toast, and eat outside in the sun!

Fusilli with Corn: a pasta dish created by my best friend when we were kids. A box of fun, twirly past, five ears of corn, a couple tablespoons of chives, a few tablespoons of butter and lots of grated Parmesan cheese. Plus a side of mixed greens in a light acidic dressing. Quick and fresh!

Baby Bibb or Boston lettuce braised with Garden Peas and Heavy Cream. Prepare a bouquet garni of bay leaves, parsley, and thyme. Sautee shallots in butter with salt until translucent and then add the peas and the halved lettuce heads. Pour over just enough stock to come about halfway up the lettuce and add the bouquet garni. With the lid on, simmer the veg gently for about 20 minutes (40 if using more mature lettuce.) Remove the vegetables when the lettuce is fork tender and reduce the liquid by half. Add a few tablespoons of cream per lettuce portion and reduce further until the liquid is thick and syrupy. Toss the vegetables in the sauce and serve. Add a teaspoon of sugar if desired. I often pair it with lamb, sausages, or roasted poultry. Bread is always a good idea.

Ramps, Ramps and more Ramps. I live Ina. Climate that is mostly spring-like weather all year long and many thing I can get easily. But ramps only show up this time of year and I love to seat them whole and eat with some great crunchy salt.

I definitely love my Vietnamese-style Spring Rolls in the spring! I sautee sliced fatty pork with various Taiwanese-inspired seasonings (our cuisines differ from in terms of herbs), boil rice noodles, and cut up fresh veggies. I also make my own peanut sipping sauce! Great way to enjoy your vegetables :)

Spring food to me is lighter... I love playing with fresh produce from the farmers market. Quick blanched asparagus that is roasted with olive oil salt, garlic and dijon and then topped with a couple poached eggs and a toast pistachio crumble... Some dark grain French bread for dipping and white wine. Bam. I want that pan. Ha.

Our family always has a small crop of morel mushrooms pop up in the backyard come May. So by far my favorite spring skillets supper is a prescious handful of those sautéed with butter, a smashed garlic clove, fresh black pepper. Finished with a small squirt of lemon and chives (also from the yard) and heaped on the best sourdough money can buy. Everything I could ask for and more.

Spring is time for the main dish salad to return. When the kids were little it would be laid out on the table as a salad bar, protein toppers, lots (LOTS) of fresh, colourful veggie options and homemade dressing with a wholegrain roll or bread. They got (and still do) to use whatever they wanted, but that was all there was for dinner ... they learned a lot about making smart choices for themselves.

living in Louisiana and having much earlier access to spring produce, I love sautéing any veggies I can get my hands on at the farmers market (normally snap peas, tomatoes, giant green onions, sweet corn, and fresh basil), throwing it on some type of grain, and topping with locally pressed olive oil and balsamic vinegar. So simple but so good!

Our favorite springtime weekday dinner is toasted sandwiches made with spinach, mushrooms, and spring onions — with provolone cheese and mustard. I sauté onions first, followed by cooking the mushrooms in a skillet on high heat with just a little bit of oil. I break fresh spinach into pieces with my hands and let it wilt in the pan along with the onions and mushrooms. A bit of salt and black pepper is all the seasoning this needs. Then I pile this delicious vegetable mix onto sourdough slices, add provolone cheese and a bit of stone ground mustard, and grill each sandwich for a couple of minutes. Voila! Easy and delicious meal with all the goodness of fresh spring vegetables and hardly any time in the kitchen.
