I've now eaten enough carrots to have night vision without goggles.

Grab some slender carrots. Thinly shave them (with a vegetable peeler) into long pretty ribbons. Toss in a bowl with nigella seeds. Make a dressing with grapeseed oil, lemon juice, salt and pepper.Toss again, add fresh mint leaves. Eat.

Last summer me and a friend made some carrots for a goat cheese sandwich, and they were the best I've ever had.

Basically it was sliced carrots in a saucepan, along with olive oil, cinnamon, nutmeg, black pepper, salt, brown sugar, cayenne, cumin, paprika, and a little lemon juice. We sauteed them until the carrots got to the perfect softness, then threw them onto our sandwiches. Mmm!

pumpkin spice carrots

slice 3 large carrots on an angle about 1/4 inch thick and layer in a shallow dish. add 1 tsp of pumpkin pie spice, 1 tbsp brown sugar and 1/2 cup of orange juice. Sprinkle pecans over the top. Bake at 350 degrees for 30 minutes.
