Forget apple season: It's cheese-eating season. We're on the cusp of the time of year when there's no risk that making cheese into a meal (the melty or crispy kind—not the cheese plate kind) will leave you uncomfortably sweaty and wishing to shrug off your own skin.

No, now's the moment when cheese is our source of warmth, our pulley through the cold winter ahead. At least that's what I'm telling myself.

Here are 28 ways to eat cheese for dinner—as cheese, glorious cheese; in between or on top of bread; mixed into pasta; and with some vegetables thrown in there. And, if you just can't get enough, 4 ways to eat it for dessert, too.

MMMMM!! Literally reading about cheese as I snack on Edam cheese, sausage and homemade almond flour crackers. :D
