18 Sturdy, Surefire Snack Cakes That Can Go Wherever You Go

Who says a slice of cake can't be a co-pilot on all your summer adventures? It might be crazy to schlep a slice of a twelve-layer tower to the seaside, but there are plenty of sturdy, stout, self-contained snack cakes that will be happy to stick by your side—whether you're biking 'round the park, hiking up a mountain top, or lounging by the pool (or in front of the television).

Cut a thick slice or wedge, wrap it in tin foil, and stick it in your bag (but not in your back-pocket!). It'll be ready when—and wherever—you are.

How about Bibingka? It's a Filipino dessert made from sweet rice flour, shredded coconut and canned milk, at least in its original and simplest incarnation. Similar to a mochi cake in moistness, only firmer because it's made mostly from the coconut - the milk and rice flour are just there to hold that together. ;) Really quite delicious.
