7 Peanut Butter Cookies from Classic to…Cheesy?

Every month in our Baking Club, there's a recipe that goes crazy—one member makes it and then another and another, until you feel like you're missing out if you don't make that one recipe everyone else is making. This month's book is Stella Parks’ BraveTart, and the recipe to make is her Honey-Roasted Peanut Butter Cookies.

What makes her recipe so special is that she takes the best parts of peanut butter cookie recipes from as far back as the 1890s and combines them to make the ultimate cookie. Newer recipes cut out butter from the equation, but she brings it back: "...only enough to help the peanut butter cream up fluffy and light." And the best trick comes from the 19th-century recipes: Use ground peanuts to boost flavor and keep the cookies tender.
