When it comes to layers, I prefer mine savory. Lasagna, that multi-story oozy treat, is the antidote to my cravings. By now, the formula is rote: tomato sauce, cheese, sheets of pasta. But, at times, convention begs reinvention. So while the classics are good—great even—with lasagna, there’s always room for interpretation.

Sub red sauce for a brown one; stuff a new vegetable between its soft layers; or turn everything on its head and deconstruct the dang thing.
