A (Not-Too-Sweet) Peanut Butter Granola to Batch-Bake, Stat

Alright, friends. We’re fully settled into the new year and trying to be good about starting our days off on solid footing—and that means breakfast. Oats in some form or another are one popular, affordable way to tackle the first meal of the day: Serve up a warm helping during tundra-like conditions (hello, #bombcylone2018), or grab jarred portions of the overnight variety when you’re on the run.

Granola, of course, is another tasty option; but some versions lean a touch more on the sweet-treat end of the spectrum than the breakfast side. That’s why, when we came upon a peanut butter (!) granola from Lindsay Maitland Hunt’s new Healthyish cookbook (out tomorrow, January 9), we couldn’t have been more excited.

This granola ticks all of the boxes: It uses easy-to-find ingredients, it's hearty, it's snack-able, and oh yeah—it's delicious. The small amount of maple syrup creates a balanced sweetness that is far from cloying, and the addition of roughly chopped peanuts, in combination with smooth, creamy peanut butter, lends the granola a welcome nuttiness.

If you’re a fan of peanut butter oatmeal cookies (or even oatmeal and peanut butter cookies, separately), think of this as a not-too-sweet breakfast version that also happens to store well (up to two weeks at room temperature). We can see this granola playing well atop yogurt, crowned with a few berries or a dollop of jam—really, any excuse to recreate a deconstructed PB&J is fine by us.

This might just be the perfect large-batch solution to shake up our morning (and snack!) routine.

I love granola on my açaí bowls, sprinkled on homemade coconut yogurt with a sprinkling of fruit and cocoa nibs, I’ll even top my banana nice cream with it. Love the crunch!!

My favorite way is so simple: there is a local company that makes true Greek yogurt with just a touch of honey, it's so good it's borderline indulgent. This is a treat I get myself nearly every week, along with some locally produced Olive Oil granola.

Granola has to be sprinkled evenly across a wide bowl of plain full-fat yogurt, along with plenty of diced apple or berries (yogurt just tastes better in a nice flat bowl instead of scooped out of the plastic cup!)

I am a BIG granola (and "cranola" - aka cookie granola) fan and prefer eating it straight by the handful. It's also delicious paired with yogurt and fruit (typical) and sprinkled on salad to add crunch (less typical). Congrats on the new book - looks lovely!

I love to have my granola do double duty....especially for my kids. When I make a batch of granola (this one would be ideal) I use half of the cooked granola for Bars. By adding extra sticky fruit, chia seeds and water
or cooked oatmeal I get two snacks from one batch. One for home and one on the go. Can’t wait to try this one...maybe we’ll call it peanut butter and jam! Thanks for the cool recipe!

Basic breakfast when I had young children at home was a simple bowl -- cut fruit, enough yogurt to mix in, and a generous sprinkle of granola. Usually both granola and yogurt where home made, so we always enjoyed variety. It's still a favorite in the 'empty nest.'

I first ate peanut granola in Baja! I could taste the vanilla and the granola was only slightly sweet. I eat it with plain, organic, Greek yogurt. Can’t wait to make this one.

A small handful, neat, followed by a hasty strip mining session to go after a few of the sweet, toasted pecan halves that are in every batch of granola I make . . . . . . (the key to strip mining happiness being to put twice as many pecans in as the recipe calls for!) Or, a heaping tablespoon over microwaved sweet potatoes mashed with a touch of almond milk and a few gratings of nutmeg, for an indulgent, hearty breakfast. ;o)

In the fall and winter, one of my favorite go-to breakfasts is yogurt and granola stuffed squash. :) I love to roast a batch of acorn squash halves with a little bit of coconut oil, cinnamon and nutmeg. Then during the week I warm up one half of a squash, fill it with plain greek yogurt and top it with whatever kind of granola I have on hand. I love making granola at home and it's become a staple in the morning for my fiance and I!
